Timeline updated after delays

LANDRUM–The Stubborn Mule Brewery now has an opening timeframe. After a series of delays the brewery and restaurant is now set to open in Landrum during the fall of this year.

Since buying the building in 2022, Tom Quantrille and his wife have seen their share of disruptions as they’ve tried to launch the business. 

In addition to the challenges of refurbishing an older building into a brewery and restaurant, the couple has also faced financing issues. According to Quantrille, financing was delayed when the original bank loan fell through.

“It was a total surprise and shock,” said Quantrille. “We had to find another lender. The financing added an additional four-month delay, but a new loan is in place and should be closed on shortly.”

All underground plumbing is now complete, but much still needs to be done. Electrical wiring, outdoor plumbing and the HVAC system all still need to be installed. 

The Stubborn Mule plans to only serve their products at their brewery. Its focus will be on high-quality lagers and ales, as well as seasonal offerings. A small 3-barrel pilot operation will allow for specials and fun, new products.

Quantrille’s brother-in-law will act as head chef, and the brewery and restaurant will feature an everyday lunch and dinner menu that will include appetizers, soups and salads, and entrees like burgers, chicken and fish. The dinner menu will include higher-scale entrees such as steaks, duck and crab cakes.

Plans also include a 2,000-square-foot covered patio that will feature music during the warmer months, where customers can enjoy their food and beverage on the lawn or under a covered roof, as well as lawn furniture and outdoor games.

“This will be a family-friendly place,” said Quantrille. 

And for those curious, Quantrille explained the namesake of the upcoming brewery.

“Yes, we really do have a stubborn mule – her name is Rosie,” he said.
