Aurora, owner of new restaurant Polito’s, opened her business inside of V-Go gas station on December 16th. Polito’s is in memory of Aurora’s father who passed away in late 2018. Now to honor his memory, she serves authentic Mexican cuisine that is traditional to her family’s region in Mexico. In addition, Politio was the nick name of her father, Hipolito.

At a young age, Aurora used to play “restaurant” with her cousins and siblings which coined her father’s dream. “One day, we’ll have a little business,” he would say. Aurora now calls her father’s dream her own and honors him by hanging his picture by the register.

Huarache, sope, tamales, burritos, and tacos are some of the Mexican dishes Polito’s serves. They also serve a few American dishes as well.
