Middle schoolers learn the chemistry of chocolate

Some Polk County Middle School students decided to learn a little bit about chemistry and chocolate in a week-long camp taught by Polk County High School chemistry teacher Leslie Rhinehart.

The students learned about the pH of different cacaos, constructed solubility tables, separated the fat from baking chocolate, tried many different types of chocolate and ultimately made their own chocolate bars from their recipes.

The students were thankful to the Polk County Community Foundation for sponsoring the camp.
